Crock-Pot Enchiladas! ((And other Necessary Stuff!))

First things first!

Midnight Flight is has been loaded into the longarm machine. Not sure if it will get finished today, but I’ll make a good go at it. Thank you SO MUCH for the comments and compliments. I was afraid that border would be too much IN YOUR FACE with the red, purple and tangerine ---but I do love it. And those extra parts? On the back! Just WAIT til you see it!

And just a secret between you and me --- The due date for entering my next block for 100 blocks volume 6 is creeping up on me…so I started playing with those left over border units and designed a block using them. SO yeah—it too will match the quilt! LOL! Bet you’ll guess which one it is when you see it. :cP

Also on my list today ---packing up for my trip to Fort Myers and Naples Florida on Monday! It’s an early early flight so it’s a perfect day to have our Thimbles Up Linky Party ---I’ll set my post to go early Monday morning, and then those who have thimbles to share can link up.

Who is interested in participating in another Yard Sale Saturday?? The first Saturday in March is March 3rd. I’ll be HOME that day, so I can do it. I’m sure I can drag up something to sell on here. If you are interested in participating, leave a comment below so I can get an idea of how many to expect. It was great fun last time!

For those who have asked about the 3 rail frame and the quilting hoop on a stand….They are currently living in my attic, and I need to get them down, check to be sure I’ve got all the parts, and be sure everything is in order before I sell them, so I will be contacting you in the order that your email was received if all the parts are present!

So on to the recipe for today:

I’m wanting to put “SOMETHING” in the pot ---I want something that is easy, tasty, and minimizes the amount of time and fuss I need to spend in the kitchen because I’d rather spend my time in the basement studio.

THIS is on my to-make list today. I have “MOST “ of this at home already so it will only take a quick trip to Food Lion to grab the rest. After everything is in the crock pot, this only needs to cook 45 mins to an hour. It’s a great one to take to pot luck type events too! Enjoy!

INGREDIENTS:

1 pound lean ground beef

10 (6 inch) corn tortillas, quartered

1 (1 ounce) package taco seasoning mix

1 1/4 cups water

1 (12 ounce) jar chunky salsa

1 (10.75 ounce) can condensed cream

of mushroom soup

1 (10.75 ounce) can condensed cream

of chicken soup

4 cups shredded Mexican cheese blend

DIRECTIONS:

1. Crumble the ground beef into a skillet over medium-high heat. Cook and stir until evenly browned. Add taco seasoning and water; simmer for 15 minutes over low heat.

2. In a medium bowl, stir together the salsa, cream of mushroom soup and cream of chicken soup. Mix in most of the cheese, reserving 3/4 cup for later.

3. Place a layer of tortillas covering the bottom of a slow cooker. Scoop a layer of the ground beef over that, and then spoon a layer of the cheese mixture. Repeat the layers until you run out of stuff, ending with a layer of tortillas on the top. Top with remaining cheese.

4. Cover, and cook on High for 45 minutes to 1 hour.

This looks like a recipe I've seen on allrecipies.com and have been dying to try. Your post just pushed me over the edge. LOVE enchiladas, and LOVE my crockpot -- that sucker is a quilter's best friend.

I'm new to following you and I am really enjoying your posts. I'm not a scrap quilter although I did take 3 fat quarters and cut them up the other day for a "someday" hidden spools quilt. It feels good to kow those scraps will have a purpose. It will also make checking out the Adopt- A-Fabric table at quilt quild more interesting.

Looks YUMMY!! Kelli is coming home to sew for a couple days so I think it might be the perfect time to give it a try. I'll be yard saling again. Kelli wants to clean some goodies out.

Sounds and looks yummy!!!! How many does it serve? We have a BOM group who get together each month for dinner, laughter and sharing of completed blocks. This would be a great main dish. Wish I could yard sale with everyone but I'll be away until the 5th. Maybe next time. Can't wait to see the quilted Midnight Flight quilt. I love the boarder! It's perfect for the quilt.

I love the crock pot ... I hate having to stop in the middle of piecing or quilting to prepare dinner. Occasionally I can sweet talk my hubby into fixing something on the grill ... he's willing, but I feel guilty. I am adding the ingredients to my shopping list right now. ;-)

I've got a couple of large boxes of fabrics that I inherited from my mother-in-law. Her tastes were 180 degrees different than mine, so I don't foresee me ever using those fabrics (haven't used any in the last 5 years). I need to get those boxes out, take an inventory of the fabrics and see if I can sell them on an upcoming Yard Sale Saturday. They ought to get used rather than continue to sit in a box downstairs. ;-)

Today I had a lot of chicken left on one of those rotisserie chickens from the supermarket, and I wanted to cook the bones for broth to freeze so what to do with the meat? and ta da, I remembered your crock pot enchilada post. Luckily, I had the other ingredients in my cupboard and fridge and subbed chic for ground beef. Thx!! It is so yummy and was really straight forward to do. I appreciate you posting that for us!
