It’s All About the Slaw!

Sadie and I made the journey this morning and have been settling in and enjoying the cooler temps the mountain provides.

You can tell the humidity is high.

the mountains are hazed over, a ghost of themselves.  It’s been about a month since I’ve been up here ---can’t believe it’s been that long, and things are green and lush and summer is fully upon us.

I am turning my attention toward family and a long holiday weekend.  Is there anything better?

Something happens to me the moment I unpack the groceries.  I want to cook!  I want to provide yummy food for my family.  This doesn’t often happen at home, where work is ever-present and schedules have us all going in opposite directions making a “together” meal time a rare occasion.

But up here?  FOOD HAPPENS!

Today I felt like making a big batch of cole slaw so I thought I’d share my favorite recipe with you.

Who knew that cabbage didn’t just come already chopped in bags!

Try making slaw from fresh ingredients.  it is SO MUCH BETTER!  I love coarse chopped cabbage –this is SUMMER for me.
Ingredients:
  • 6 cups shredded green cabbage
  • 3 cups shredded red cabbage
  • 1 cup shredded carrots
  • 1/2 cup chopped green onion
  • 3/4 cup mayonnaise (can use light mayo – NOT miracle whip)
  • 4 teaspoons sugar (can use Splenda or other sweetener)
  • 1 tablespoon cider vinegar
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup toasted sunflower seeds
  • 1/4 cup raisins
  • 1/4 craisins
Of course the sunflower seeds, raisins and craisins are OPTIONAL – but I think it makes such a yummy slaw!

Combine the cabbages, carrots and green onion in a large bowl. Combine the mayonnaise, sugar, vinegar, mustard, salt and pepper in a separate bowl. Pour the mayonnaise mixture over the cabbage mixture and toss thoroughly. Chill at least 1 hour before serving.

This makes a LOT of slaw.  You can do a half a batch if you like….it will last several days in the fridge ---oh so creamy good!

  9. You need company for that cold slaw.. I will be right up... give me a sec! :) Relaxing must be much easier at the cabin. And where did you get the super flag? VERY nice!

    This year we are having a slower July 4th, but still celebrating the birthday of our country! Flags will fly here.

    My favorite is the Antique Tumbler in Darks & Lights (second picture down). I have a bunch of tumblers cut from the Accuquilt 3 1/2" die, time to start stitching them together!! I hope you have a wonderful weekend, I will be sewing with friends.

  12. Enjoy your long weekend at Quiltvilla! Sit back and relax not that you have to be reminded to do that but sometimes we need to give ourselves that permission. This weekend finds me heading out to do some camping at my family reunion.

    I just made the slaw for our annual 4th of July bbq. I didn't use raisins or sunflower seeds. As I had on hand sundried cranberries and pepitas. It's delicious. Thanks for sharing your recipe Bonnie. Happy Independance day to you and your family. Thankful to live in a free country!

  15. Hope you had a wonderful 4th with the family. Our 4th started out great with our 2nd from youngest getting married in a beautiful wooded setting in Portland Oregon's Hoyt Arboretum and finished with fire works at the River in Portland. What a wonderful day!
    I was taught to make cole slaw very similar to yours... one thing I do is add pineapple tidbits for a sweet factor. Enjoy July!
