Grateful on Buck Mountain!

We are so enjoying our time up here.

Friends Irene and Dave arrived on Tuesday night late so yesterday we got to show them our surroundings on Buck Mountain by daylight.

I love it when people see this place for the first time.

I love sharing this part of me with them.

And we have Sadie to lead the way!

I think Sadie enjoys the mountains more than all of us combined.

I love taking folks to this special spot.  Irene, Dad, Sadie and I hiked to the top of the waterfall while the two Daves took the Razor for a spin and met us at the top.

I can never get enough of the sounds of the waterfall either!

Sunset happened like this!

Things to love about the winter time – all of the leaves are down in the surrounding woods, leaving a view of the mountain ridge to the west through the bare branches.  I love watching the sun go down behind that ridge from my front porch!

Last night’s dinner!

We had Irene’s crock pot pulled beef tacos and all the fixings for dinner.  That crock pot cooked all day and smelled so good!

Her recipe is simple, and I’m posting it here for you to enjoy:

2 1/2 lbs chuck roast
14 oz can beef broth
1 1/2 Tbl chili powder
1/2 Tbl cumin
1 tsp garlic powder
1/2 tsp onion powder
1 tsp salt
1/4 tsp pepper
1 lime

Spray crock pot with non stick cooking spray.  Place roast in crock pot.  Pour broth over the roast and then squeeze the juice of one lime over the roast.  Mix spices together and sprinkle over the roast.  Cover and cook on low heat for 8 to 10 hours, or on high 5 to 6 hours.

Remove beef from pot.  Shred beef with forks, removing any fat as you go along.  Return beef to broth in pot.  Cover and cook an additional 30 minutes.  Remove with tongs to drain juice before serving with tortillas and all of the desired taco toppings.

It was a FABULOUS dinner followed by some cut throat Mexican Train dominoes --

As I sit here and write this, contemplating my many blessings over the past year I want to wish each and every one of you a very happy Thanksgiving if you are in the USA – if you are outside the US, take a moment to think about your past year and focus on those things you are most grateful for.

Life is good in the Blue Ridge Mountains of Western NC!

And guess what happens TOMORROW?!

I know you love a good slow cooler recipe. Have you ever done Italian beef sammys!!!?
a roast
jar of sliced pepperoncinis
A can if beef broth (I use low sodium)
a packet of zesty Italian dressing mix!!
Slow cooker and shred the beef!! Serve on a hearty roll and don't forget the provalone cheese!! And the leftovers broth makes for a GREAT soup start!!!
