While I’m flying home from Vegas back to good old Winston Salem, NC, I thought I’d leave you with one of my favorite recipes….for the holidays or any time. Let’s face it, some of us who are on the go all the time, don’t even have time or the desire to roll out sugar cookies and decorate them. It was fun when the kids were little, but I’m so busy I need something I can dump in a bowl, stir, and dump in a pan and bake! And it needs to have easily readily available ingredients. ((No -- sorry, I’m not in the mood to grate or pulverize crystalized ginger for anything at this point in my life!))
However, these smell so good while baking, everyone will forgive you for being a slothful holiday party pooper in the kitchen!
Chocolate Chip Blondies
Ingredients for a 13x9 inch pan
- 1-1/2 cups packed brown sugar
- 1/2 cup butter, melted
- 2 eggs, beaten
- 1 tsp vanilla extract
- 1-1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup semisweet chocolate chips
Directions
- Preheat oven to 350ºF.
- Grease the bottom of a 13x9 inch baking pan.
- Combine brown sugar, butter, eggs and vanilla in a large bowl just until blended.
- Combine flour, baking powder and salt, and add to the brown sugar mixture.
- Stir in chocolate chips and spread the batter into the greased pan.
- Bake at 350ºF for 18-20 minutes.
- Cut into bars.
The key is to not over bake them….slightly gooey is best! And of course, real butter is a MUST! Feel free to stick some walnuts in there as well….even better!

I know what you mean - I do not fuss so much with Christmas baking anymore either - just don't feel like it! also if I bake too much it is mainly just the two of us here at home to eat it and then goes directly to my hips and waistline while I hibernate during the winter.

Oh what a great (simple) recipe! I was just making my 'menu' for our quiet Christmas Eve family gathering (ok, just the 4 of us)and this fits in just fine! When the kids were little and we had lots of people popping in, I did some major cooking, but now I have other priorities, but do still like to have some sweet treats around. Thanks!
Within an hour of waking up this morning, I was pulling these brownies out of the oven. My husband was mighty impressed. I love how simple they are and they're super delicious. Thanks for sharing!
These are great, I have made them into 'biscuits', they spread and get big, I like your idea of the bars.Baking??? there is sewing to be done!

PERFECT timing!!!! I needed something sweet, and was thinking about cookies....but....well...you know! They take so much time!!! Fill the cookie sheets, bake, fill again, bake....blah! But these!!!!!!!! Mix and pour and walk away until they are done. THANK YOU!

Oh gosh - I'd almost forgotten about those, not having kids that gobble things up. We called them Congo Bars, but the recipe is the same. THanks for the reminder.
That recipe looks similar to one of my Mom's (which I still make all the time!) We call them Congo bars...I have no idea why!

HAD to post again! I made these up shortly after you posted the first time; they were a HIT! I have another batch in the oven right now; DH's remarks: "Why are you making those again? The last thing I need tonight is to polish off half the pan again!" ;0) LOL
Boy, my Mother used to make these when we were younger, and she called them Congo Bars, too! Haven't seen them in a long time. I think I'll make them and bring them on over to my Mother(aged 91 in June). Thanks for bringing these back!
