I was thinking the center would be a mess until I saw your drawing. I have quilted 1 queen size quilt in the Bishops fan and I loved doing it. I did have a template and marked the whole quilt. I have a queen patriotic lone star quilt waiting to be quilted and have been thinking of doing it in the Bishops fan without using the template. I'm sure I will like quilting without a template. I like making queen size quilts best of all and have hand quilted them all. I've been quilting since the late 1970s and have made 15 or more and a lot of baby, lap and wall quilts in between and several miniature quilts which are a lot of fun to make plus the miniatures are completed quickly. Some are doll house size. Well that's enough of my rumbling on. I have a couple of quilts of my grandmothers and she used the fan quilting. I'm going to get them out and take a closer look at her fans.
